Garlic Truffle Mashed Potatoes

This is my first of many recipes I will be sharing with you guys!  I chose this one to share first because it is one of my favorites, & probably the dish all my friends & family like most out of all the food I have cooked for them.  I'm pretty sure all of you know how to cook mashed potatoes from scratch.  This recipe is no different.  It is very simple, & extremely tasty.  The hardest part about this dish is probably the prep work in mincing the fresh garlic by hand (easier if you use a food processor, but inconsistent chunks) or the mashing of the potatoes after they have been boiled.  This is also a pretty inexpensive dish, after the first time.  The truffle oil is the most expensive part of the dish since truffles are probably the most expensive ingredient in the world at about $999.99/lb.  But you can get a very decent truffle oil at a Wegmans or Whole Foods.  The one I bought was about $25 for the bottle.  Good thing is it should last a long time since you only need a couple of drops at a time.  So without further ado here is the recipe for my Garlic Truffle Mashed Potatoes (recipe cooks for roughly 5-6 people):

1 - Five lb bag of Redskin Potatoes scrubbed clean (My preference, you can use any potato you choose)
1 - Pint Heavy Whipping Cream
2 - Sticks of Butter (1 cup of butter)
1/2 - Head of Garlic finely minced
2-3 - Drops of Truffle Oil
Salt & Pepper to Taste

Fill a large pot about 1/2 way full with water & bring to a boil (don't forget to salt the water).  To speed up the cooking time, cut potatoes into fourths.  Once the water is boiling, add the potatoes & allow them to boil until they are soft enough to easily mash with the back of a fork (to avoid boil over, add a little bit of oil to the water).  Now I like to leave the skin on my potatoes but you can peel them if you like.  Once the potatoes are soft enough, pour potatoes & water into a large strainer, then put the potatoes back into the pot.  Use a potato masher to mash the potatoes to your liking (I like mine a little chunky).  Add the butter as soon as your finished & while the potatoes are still hot.  Taste the potatoes to check if the amount of butter used is enough, if not add more.  Next add the Heavy Whipping Cream in increments as your stirring the potatoes.  You only need to add as much as needed to get the potatoes to the consistency of your preference.  Next stir in the Minced Garlic, Salt, & Pepper.  Last step, add the drops of Truffle Oil & stir it into the potatoes very well.  The truffle flavor will make your potatoes "OUT OF THIS WORLD"!!!!!  Transfer to a nice serving bowl & you are ready to eat.
